It depends on the species. A 2kg olive flounder at 35-45% yield gives about 700-900g, or roughly 3.5-4.5 servings at 200g per serving.
How many grams is one serving of sashimi?
A serving is usually 180-200g. This calculator defaults to 200g and lets you switch to 150g or 250g.

Sashimi Yield

When a live fish is filleted, the bones, head, skin and guts are removed, so the edible sashimi is only part of the live weight. This ratio is the yield, ranging roughly 30-55% by species.
